Job Purpose

The Food Preparation Assistant is responsible for preparing food according to menu specifications and production requirements while maintaining the highest standards of food quality, hygiene, and workplace safety. The role plays a key part in ensuring efficient food production and service excellence within Air Chefs’ catering operations.


Key Responsibilities / Principal Accountabilities

Food Preparation & Production

  • Prepare and assemble food items as per menu specifications and customer (airline) requirements.
  • Use the correct airline equipment and utensils for each task.
  • Prepare extras and additional meals as instructed by the Supervisor.
  • Follow approved recipes, portioning standards, and production procedures to ensure quality and consistency.
  • Adhere to correct food handling, safety, and hygiene practices at all times.

Hygiene, Safety, and Sanitation

  • Maintain a clean, organized, and sanitised workstation before, during, and after food preparation.
  • Clean all tools, surfaces, and equipment using approved cleaning chemicals and procedures.
  • Operate dishwashing machines correctly and safely.
  • Monitor and report shortages of cleaning supplies or materials.
  • Ensure that food safety regulations, HACCP standards, and Air Chefs SHEQ policies are strictly followed.
  • Identify and report all unsafe conditions, damaged equipment, or potential hazards immediately.

Stock Control & Waste Management

  • Ensure daily stock rotation using the FIFO (First In, First Out) method.
  • Use stock responsibly and follow portion control procedures to minimise waste.
  • Handle ingredients and consumables with care to maintain freshness and quality.
  • Report any inventory shortages or abnormalities to the Supervisor promptly.

Operational Efficiency & Teamwork

  • Carry out all assigned tasks according to standard operating procedures and instructions.
  • Work efficiently to meet production timelines and flight schedules.
  • Be prepared to assist in different departments as per the operational schedule.
  • Collaborate effectively with colleagues to maintain a smooth workflow.
  • Uphold Air Chefs’ values of quality, safety, and customer satisfaction.

Minimum Qualifications and Experience

  • Education: Grade 12 / NQF Level 4 or equivalent qualification.
  • Experience: 0 – 6 months of experience in a food production, catering, or hospitality environment (training will be provided).
  • Training: Must be willing to undergo internal Food Safety and HACCP training.

Knowledge and Skills

  • Understanding of basic food handling and hygiene practices.
  • Ability to follow standard operating procedures and instructions accurately.
  • Strong communication skills and teamwork abilities.
  • Basic awareness of workplace safety and security procedures.
  • Ability to work independently under supervision.
